Rump in Wood-fired Oven (Lajes das Flores – Flores)
Rump in Wood-fired Oven is a typical dish of traditional Azorean Cuisine. The recipe differs between the various islands and in Flores Island, after a short walk, it was in Aldeia da Cuada that I had the opportunity to taste this delicacy and I can assure that is delicious. After 4 hours in the wood-fired oven, in a bath of red wine and spices, the meat turned out very tender. As side dish, a plate of white rice and salad completed the dinner.

This recipe so rich of our gastronomy was served in black clay casserole where I quickly saw the bottom.
To finish this meal, I choose a delicious “Araça” mousse, a fruit from South America but it is also very common in the Azores.
